Do y’all remember the Yumbo sandwiches from Burger King in the 1970s? Mama and I loved to stop by and get one when we were in Hattiesburg. Actually, now that I think about it, I may have only had one at Burger King because we started making them at home. Thinly sliced have with American cheese. They are so good. I made this dip recently with some leftover ham and it was perfect. Jack Morgan loves it.
Yumbo Dip
Ingredients:
1 tablespoon butter
1 small onion, chopped
1 pound ham, chopped
1 pound Velveeta cheese cut into cubes
1/4 cup mayonnaise
Milk to thin
Directions:
Melt the butter in a skillet and cook the onions until tender. Add In the ham and cook about 5 minutes. Add the cheese and mayonnaise. Make sure the heat Is not too high and melt the cheese slowly. Add milk to thin to the consistency you prefer. I prepare and serve this dish in my medium size cast-Iron skillet. Serve with scoops.
