Hot Tomato Oil

Y’all. This is my Lucy’s favorite. Anytime I send out a family text asking for request, she always asks for this dipping sauce. Much of the time Lucy flies under the radar in the family. She lives in Memphis so we don’t see her and and George nearly enough, but we love our time when we’re together. Lucy is a teacher in Memphis and she’s doing what God created her to do like her mother. Although she’s only been teaching 4 years, I’ve been told by many she’s a natural. Children love her, and so do I.

Hot Tomato Dipping Oil


Ingredients:

 

1/2 cup olive oil

5 cloves of garlic, thinly sliced

1/2 teaspoon red pepper flakes

1 28-ounce whole canned tomatos, pureed in the food processor

Salt to taste

 

Directions:

 

Add the olive oil and garlic to a small boiler and simmer about 15 minutes.  Whisk In the remaining Ingredients until the mixture Is smooth and Incorporated.  Adjust the salt.  Best served warm with some good crispy bread.
