Sausage Corndog Lollipops
Ingredients:
1 pound link sausage cut into 1 Inch chucks (any link sausage will work)
1 1/2 cups yellow cornmeal
1 cup flour
1/2 cup sugar
1 tablespoon baking powder
1/2 teaspoon salt
2 eggs, beaten
1/2 stick of butter, melted
1 1/4 cup milk
Oil for frying
Directions:
I like to use my Fry Daddy for this recipe because the oil Is a little deeper than a skillet. Heat oil to medium. Toothpick the casing side of each sausage chunk and set aside. Combine the remaining Ingredients in a mixing bowl. Grasping the toothpick, dip each piece of sausage into the cornmeal coating before dropping into the oil. Do not remove the toothpick. Brown on all sides before removing to drain. Allow the lollipops to cool a bit before serving. Serve with your favorite dipping sauce. I combined a little yellow mustard and barbeque for mine.
