Open Faced Bacon and Tomato Sandwiches


Nothing marks the arrival of summer better than the appearance of fresh home-grown tomatoes. Anyone from the South would most certainly agree. We’ve been making these little summer gems since the late 1990s when my friend Fran Ginn prepared them for a Delta wedding. Fran is one of my very favorite people who has cooked for weddings and events all over the South. She owned The Backdoor Café in Columbia, Mississippi, for many years. Guests will go crazy over these little sandwiches. When I can’t get a fresh tomato, I use the small cocktail tomatoes. The size of the tomato slice is perfect for the small bread circles.
