Jay's Corn Dip




Jay's Corn Dip


Ingredients:


3/4 cup mayonnaise

1 tablespoons sugar

1 tablespoon white vinegar

1/2 teaspoon salt

1/2 teaspoon black pepper

2 cans shoe peg corn, drained

1 English cucumber, peeled and diced very small

10-ounce package of grape tomatoes, chopped very small

1 green bell pepper, diced very small

1/2 red onion, diced very small

 

Directions:


In a medium mixing bowl combine the mayonnaise with the sugar, vinegar, salt, and pepper.  Add In the remaining Ingredients and refrigerate until serving.  I like to make mine a day ahead so all the vegetables have time to marinate.  Serve with scoops.
