My favorite part of Friday Night Porch Party Instagram is getting to talk to friends from all over the country about food. I recently made a plea for some new “dip” recipes. My Friday friend Sherry Weaver from Arizona sent me this one, and Lou says it’s a winner. It was the star of my Friday board. Lou and I are major garlic lovers. We love it when the garlic is so strong you get that garlic burn. OMG. We simply love it. Many friends worry about eating too much garlic before getting a kiss. Does that really matter when your love is a garlic lover, too? I don’t think so! Lou votes this her new favorite dip. Don’t be afraid. Give it a try this Friday.
Garlic Lovers Dip with Bacon
Ingredients:
3 heads of fresh garlic cut in half
3 tablespoons olive oil
1 1/2 cups sour cream
1/2 cup mayonnaise
1/2 teaspoon dried rosemary
1/2 teaspoon dried thyme
3 tablespoons dried parsley
1/2 teaspoon salt
1/2 teaspoon black pepper
3 tablespoons fresh lemon juice
8 pieces of bacon, cooked and crumbled
Directions:
Preheat oven to 400 degrees. Place the cut garlic bulbs on a piece of foil and drizzle with the olive oil and a little salt. Seal the foil and roast the garlic in the oven for 1 hour and the garlic is tender. Cool the garlic for a bit before squeezing out the soft garlic cloves. Mash the garlic cloves with a fork. Combine with all the ingredients and mix well. Refrigerate at least an hour before serving. Best served with a plain cracker like a wheat thin.
