Swamp Soup


Orange Beach, Alabama has been one of our favorite vacation spots for many years. I love that Orange Beach and Gulf Shores have so many affordable restaurants that don’t break the bank for people with large families like ours. One of my favorite little spots is Fish River Grill. Upon arrival, everyone is served a small bowl of Swamp Soup, and it’s just enough to hold you over until your meal arrives. I love it! My recipe is not exactly like the one served at Fish River Grill since I add protein and tomatoes, but it’s very similar. If you are a soup person like me, you will certainly enjoy it.







Swamp Soup


Ingredients:


1 rotisserie chicken, deboned and chopped, OR your favorite link sausage, chopped

1 large onion, chopped

2 celery stalks, diced

2 tablespoons minced garlic

1 package Knorr vegetable soup mix

1 can navy beans, drained and rinsed

1 can black beans, drained and rinsed

1 can great northern beans, drained and rinsed

1 can turnip greens

1 large can diced tomatoes

2 large boxes chicken broth

A few dashes of your favorite hot sauce

Directions:


In a large soup pot, sauté the onions, celery and garlic in a little olive oil until tender. Add the remaining ingredients. Bring soup to a simmer and cook for 30 minutes. Adjust your seasonings and add salt and pepper if needed. Add water or more chicken broth if you prefer soup to have more broth. Serve alongside some crispy French bread or corn bread.
