Scalloped Potatoes and Onions


My friend Paula doesn’t do much cooking, but her scalloped potatoes are memorable. She serves them often when grilling steaks. I took her potatoes to the next level by adding grilled onions to the dish. The flavor combination is excellent. They are rich, but delicious.









Scalloped Potatoes and Onions


Ingredients:

2 slices of bacon, chopped

1 tablespoon butter

2 onions, thinly sliced

1 tablespoon minced garlic

1 cup Swiss cheese, grated

1 1/2 cups whipping cream

2 pounds potatoes, peeled and thinly sliced

Salt and pepper

Directions:

Preheat oven to 375 degrees. In a large skillet, cook bacon rendering the fat. Leave the bacon fat in the skillet. Add the butter and onions cooking until the onions begin to caramelize. Add the garlic and cook an additional couple of minutes. In a greased casserole dish, begin layering with the potatoes overlapping them a bit. Lightly salt and pepper the potatoes. Next, add some onions then some cheese. Repeat with the remaining ingredients. Pour in the whipping cream. Cover with tin foil. Bake for about an hour and 15 minutes. Remove the tin foil and continue baking for another 15 minutes allowing the potatoes to begin to brown. Allow the potatoes to sit for 10-15 minutes before serving.
