Marinated Lima Beans

A few Sundays ago, I was preparing lunch and noticed I forgot to buy green beans for Marinated Green Beans. I had some frozen lima beans so I thought I’d try them as a replacement. Y’all, I think I like them better than green beans! They are delicious. Try them and let me know what you think.

Marinated Lima Beans

Ingredients:

24 ounce package frozen lima beans

1/2 cup white vinegar

1/2 cup brown sugar

1/4 cup bacon drippings

5 green onions, chopped

8 pieces of bacon, fried crisp and crumbled. Save the drippings.

Salt and pepper

Directions:

Heat oven to 350 degrees. Place the lima beans in a boiler and cover with water. Season with salt and pepper. Bring lima beans to a boil and cook until tender, about 30 minutes. In a small boiler, combine the vinegar, brown sugar, and bacon drippings. Heat until warm and set aside. Drain the lima beans and transfer to an 8 1/2 X 11 baking dish. Pour the reserved sauce over the lima beans. Top with the bacon and green onions. Bake for about 30 minutes.

Lou and I recently celebrated our 25th wedding anniversary. Friday Night Porch Parties have been a party of our family life since the beginning. It's my favorite night of the week.
