We met Laurie Champion back in the early nineties. She married local boy Todd Champion and moved to Belzoni. She and Lou taught kindergarten together at First Baptist Church. She is one of the funniest little things you will ever meet. She has a big laugh and a loving heart.
One Christmas, Laurie had all the teachers from the church over to her house for a little holiday get together. Lou came home just a talking about these crackers. I asked Laurie for the recipe and since then, I bet I’ve made a hundred batches. They are good with most any dip or spread, or just by themselves. They keep for weeks so you may be able to use them for several Friday Night Porch Parties.
Laurie’s Spicy Crackers
Ingredients:
6 to 7 boxes of your favorite crackers, such as Sociables, Chicken in a Biscuit, Cheese Nips, Ritz, Wheat Thins, Mini Club crackers 4 tablespoons Worcestershire sauce 1 1⁄2 sticks butter, melted
3/4 cup oil 3 tablespoons Accent 2 teaspoons red pepper flakes
3 teaspoons garlic salt 3 teaspoons chili powder 3 tablespoons Tabasco sauce
Directions:
Preheat oven to 250◦. Empty all crackers into a medium garbage bag and mix well. Whisk other ingredients together and pour into bag over crackers and toss. Place crackers on 3 large baking sheets, and bake for 30 minutes, stirring occasionally.
