Jay's Creamed Spinach



Jay's Creamed Spinach


Ingredients:


2-3 pounds of fresh spinach boiled in salt water until tender.  Drain and set aside.

1 yellow onion, diced

1 stick of butter plus 2 tablespoons for the topping

1/2 cup flour

1 can evaporated milk

1/2 cup milk

1 teaspoon salt

1/2 teaspoon black pepper

1 teaspoon garlic powder

2 dashes of Worcestershire sauce

1 pound Velveeta cheese, cubed

1 cup Panko breadcrumbs

 

Directions:


Preheat oven to 350 degrees.  After squeezing as much water as possible out of the drained spinach, ruffly chopped and set aside.  Add the chopped onion and 1 stick of butter to a large skillet and cook until the onions are tender.  Add In the flour and cook about 5 minutes.  Using a whisk, mix in the evaporated milk, milk, salt, pepper, garlic powder, and Worcestershire sauce Once the sauce has thickened, add in the cheese stirring until melted.  Fold In the chopped spinach and combine well.  Transfer the mixture to your baking dish.  In a small mixing bowl, combine 2 tablespoons of melted butter with the Panko breadcrumbs.  Sprinkle the breadcrumb mixture on top of the spinach mixture and bake about 20 minutes and the topping begins to brown.  Remove from oven and serve warm.
