
If I’m totally honest, I struggle with writing recipes down. I just make stuff up as I go. Several years ago, Lou went to the beach with girlfriends, and I sent along some garlic pimento cheese for snacking. Lou’s friend, Leigh Ann, loved it and asked for the recipe. I made some this weekend and wrote down the ingredients as I went. Be warned! The garlic is pretty strong, but so good! Leigh Ann, several years later, here’s the recipe. Enjoy!
Garlic Lovers Pimento Cheese
Ingredients:
1 entire garlic bulb
1 tablespoon olive oil
1 8-ounce cream cheese, softened
1 cup mayonnaise
1 teaspoon onion powder
1 tablespoon garlic powder
1 teaspoon salt
1 teaspoon black pepper
2 teaspoons grated onions
1 small jar diced pimentos
2 cups Monterey Jack cheese, grated
2 cups Sharp cheddar cheese, grated
Directions:
Preheat oven to 350 degrees. Cut garlic bulb in half. Drizzle with olive oil and a little salt. Loosely wrap the garlic in aluminum foil and place on a baking sheet. Bake about 30-35 minutes and garlic is tender. Remove from oven and cool. Squeeze the garlic bulb’s cloves out of the bulb and mash with a fork until a paste is formed. Transfer the garlic paste to a large mixing bowl and combine with the cream cheese, mayonnaise, onion powder, garlic powder, salt and pepper. Mix well. Fold in the grated onion, pimentos, and cheeses. Refrigerate.
