At Lou’s Christmas open house, Esther was telling me about this popular appetizer her friends and family enjoy. I added it to the next Friday Night Porch Party menu, and it was a hit. In fact, Cameron has reminded me of it more than once. Don’t let the peppers scare you away. It has a nice bite, but the peppers aren’t overwhelming.
Esther's Cheese Slaw
Ingredients:
1 pound Swiss cheese, grated
1 pack of green onions, chopped
1/2 cup banana peppers from the jar, chopped
1/2 cup jalapeno peppers, chopped (fresh or from the jar works)
1/2 cup mayonnaise
Directions:
The day before you plan to serve this appetizer, combine all ingredients and refrigerate. You may want to add a little extra mayonnaise if you prefer the dip with a little more juice. Serve with Fritos scoops.
