Mary and Erna's Potato Salad


Years ago, we had a place down at Orange Beach, Alabama. We made some dear friends in Mark and Mary Robicheaux. They live in Franklin, Louisiana and Mark builds air boats for a living. Their best friends are Erna and Tebow. They have a large family and always cook big meals for everyone at Summerhouse. One night, Mark was frying alligator. I walked through the kitchen and thought it was odd that Mary and Erna were just boiling the potatoes and it was almost time to eat. My Mama always made hers ahead of time and served it cold. Mary said, “Oh, we eat warm potato salad in Louisiana and all we use are potatoes, eggs, and homemade mayonnaise.” Y’all it’s absolutely delicious! Its Cameron’s son Zachary’s very favorite.




Mary and Erna's Louisiana Potato Salad


Ingredients: 12 medium red potatoes, peeled and diced into bite size pieces

12 eggs, hard boiled, peeled and chopped 1 cup of your choice of mayonnaise (add more if you like) Salt and Pepper to taste

Directions: About 30 minutes before serving, boil potatoes in salted water until tender, but not mushy. Move to serving bowl and top with eggs. Just before serving, mix in the mayonnaise. Salt and pepper to your liking. What makes this simple potato salad so good is that it’s served warm. Modifications: Honestly, anything can be added. Lou likes me to add a little chopped red onion. Anne Scott like me to add chopped bacon.
