Jay's Mashed Potatoes


My buddy Cameron said everyone knows how to make mashed potatoes. However, I beg to differ. My mama made the boxed kind, which still surprises me. These go great with everything, but our family insists we have them with Mama Nell’s Pot Roast. My mouth is watering as I write this.


Jay's Mashed Potatoes


Ingredients:


1 5-pound bag red potatoes, peeled and cubed

1 stick of butter

1 cup of sour cream

1 cup half and half

1 teaspoon white pepper

Salt to taste

Directions:

Using a 4-5 quart Dutch oven or large pot, cover the potatoes with water and add enough salt so the water tastes "salty like the ocean". Boil the potatoes until they are tender. Using a colander, drain off the water and rinse the potatoes a bit. To your boiling pot, add the stick of butter. Add your drained potatoes back to the boiling pot. Give the butter time to melt before adding the remaining ingredients. Using your hand mixer, whip the potatoes until smooth. You may need to add a little more half and half or milk if they are too thick. Adjust your salt. These are fantastic served alongside Mama Nell's Pot Roast.
