Everyday Chicken Salad


Ingredients:


4 chicken breasts, cooked as you like

1 8-ounce cream cheese, softened

1/2 cup mayonnaise

1 teaspoon garlic powder

1 teaspoon onion powder

2 stalks celery, coarsely chopped

1/2 onion, coarsely chopped

1/2 cup dill pickle relish or chopped dill pickles

Salt and pepper to taste

 

Directions:


Everyone prepares their chicken breast differently for chicken salad.  I like to cook mine in chicken broth.  In a medium boiler, I bring the broth and chicken breast to a boil for about 5 minutes, turn off the heat, and let the chicken sit in the broth for an additional 30 minutes.  Remove the breast from the broth, debone If not using boneless, and coarsely chop the chicken.  I shred my chopped chicken with a hand mixer until all the chunks are shredded.  Set aside.

 

Next, I run the celery and onion through my food processor until finely chopped.  If you are not using dill pickle relish, you can throw the pickles in too.  Set aside.

 

In a large mixing bowl, combine the cream cheese, mayonnaise, garlic powder, and onion powder.  I use my hand mixer.  Add salt and pepper to taste.  Fold In the chopped vegetables and then the chopped chicken.   Refrigerate until serving.
