Chicken and Sun-Dried Tomato Pasta Bake


Ingredients:


2 cups mayonnaise

2 cups milk

1 tablespoon garlic powder

1 tablespoon onion powder

1 cup grated parmesan cheese

1 8.5-ounce jar julienned Sun-dried tomatoes, drained (reserve oil)

10-ounce package fresh spinach

8-ounce package sliced mushrooms

1/2 cup whole garlic cloves, roasted (optional)

1 pound box pasta, cooked according to package directions

1 rotisserie chicken, deboned and chopped

 

Directions:


Preheat oven to 350 degrees.  In a medium mixing bowl combine the mayonnaise, milk, garlic powder, onion powder, parmesan cheese and reserved sun-dried tomato oil.  Season with salt and pepper to taste.   Toss all the remaining ingredients with the dressing.  Place In an 8 1/2 X 11 or larger baking pan.  Cover with foil and bake 30 minutes.  Remove foil and bake for 10 more minutes.  Give the pasta a good stir before serving.
