Belzoni Artichoke Rice Salad


The first time I had this recipe was actually at our Belzoni home. Our special friends, An and Bill Faulkner, hosted their daughter Amanda’s wedding at our house and prepared this very special rice. I fell in love with it! It can be served warm or cold. I prefer it cold. I like serving it with something off the grill. It’s a dish that can be made ahead so you won’t be stressing getting everything ready for your Friday Night Porch Party.












Belzoni Artichoke Rice Salad


Ingredients:

2 packages chicken flavored rice

3/4 cup green bell peppers, chopped

8 green onions, chopped

16 stuffed olives, sliced

2, 6-ounce jars marinated artichoke hearts, drained and marinade reserved

2/3 cup mayonnaise

1 teaspoon curry powder


Directions:

Cook rice as directed on package, omitting butter. Let cool. Combine peppers, onion, olives and artichoke hearts then fold into the rice. Mix reserved marinade with mayonnaise and curry powder; toss over the rice mixture. Serve in a large dish. Yield: 12 servings. Source: The Festival Cookbook.
