Paul's Meat Sauce

One of my very favorite dishes is Paul’s Meatloaf. Paul’s meat sauce must be served with it. Don’t even think about skipping either one.

Paul's Meat Sauce


1/4 cup vegetable oil

1/4 cup all-purpose flour

1 onion, chopped

1/2 green bell pepper, chopped

2 stalks celery, chopped

1 fresh jalapeno, deseeded and chopped

1 tablespoon minced garlic

1/2 teaspoon cayenne pepper

1/2 teaspoon white pepper

1/2 teaspoon black pepper

3 cups beef broth

Salt to taste


In a large skillet, heat the oil to medium heat. Add in the flour. With a whisk, create a very light roux only cooking about 2-3 minutes. Add in everything except the broth and continue cooking about 5 minutes. Slowly add in the beef broth like you are making a gravy while continuing to stir. Cook on medium to low heat until the vegetables are tender, about 15 minutes. Add salt if needed. Serve with Paul's meatloaf and Paul's meatloaf meatballs.
