Jay's Cucumber Slaw


Each summer, Lou loves to make Cucumber and Onion Salad. It’s so fresh! I wondered how it would be mixed with cabbage in a slaw. Y’all, it worked. It was so good.

















Jay's Cucumber Slaw


Ingredients:

1 medium head of cabbage, thinly sliced

2 English cucumbers, peeled and coarsely grated (I use my mixer attachment)

1 red onion, thinly sliced

1 cup mayonnaise

1/2 cup sugar

1/4 cup white vinegar

1/4 cup water

Salt and Pepper to taste

Directions:

Combine all vegetables in a large mixing bowl and set aside. In a smaller bowl, combine the remaining ingredients to make the dressing. Pour the dressing over the vegetables and mix well. Season with salt and pepper. Refrigerate until use. I like for my slaw to marinate several hours before serving.
